The Pitchfork
The way that I did the pitchfork was not the way that I should have done the pitchfork. What I should have was to pipe melted sugar into plastic tubing. What I decided to do was to roll out the melted sugar instead. Either way, I needed melted sugar. And the recipe follows.
2 pounds sugar 1 pound water 6.5 oz corn syrup
Using a 3 qt saucepan with a heavy bottom, boil to 255F, add a little yellow food coloring, and then continue to boil to 330F. Plunge the base of the pan into a bowl of ice water to cool a little, and then pour onto a sheet of silpat.
Let the sugar cool just a little, then start folding it onto itself (lengthwise only) until it stops sticking so much to the silpat.
When it gets to this point, you can start rolling it with the silpat. It's still about 140F, so make sure you use the silpat to handle it. If it starts to get too cold, it will get brittle. If you're smart (as I wasn't), then you can use a heat lamp to help keep it warm. In my case, I continued to use the torch.
I ended up cutting off the end of the stick of sugar with my board cutter, which I heated up with the torch for the task at hand. I also used the torch to heat up the bit of sugar and bend it, then I cut it with the board cutter again, and then heated up the ends and glued it all together. A crude, but effective pitchfork.
