Beastie the BSD Daemon Cake

Those of you who have read my other cake tutorials know the drill on the next part: Time to stack the cake layers. But first, we need to make sure that we have seperate cake layers. Each 8-inch cake layer actually represents half of a cake layer, with cream cheese frosting used as the icing.

Two of these cake layers (each with cream cheese icing in the middle) would form Beastie's belly, his neck, and part of his chin. To make sure those beautiful shoes didn't get messed up, I covered them with paper towels, which could easily be removed later. In retrospect, what I should have used is parchment paper. I then fit a piece of cardboard over the dowels, which was approximately the size of Beastie's waistline. I feel bad for the guy, not really having legs at all, at least not to speak of.

With the protectants in place, I guided the cake layers over the dowels. Cake is pretty soft, so the dowels will justpunch right through it. But you do need to be prepared to remove the excess cake from the top after the dowels have punched through. Make sure to put cardboard between the cake layers too, to keep them seperate. Let's review: cardboard over the shoes, then cake, then cream cheese icing, then cake, the cardboard, then cake, then icing, then cake.

As you can see, we nailed the height on the dowels. Yay us! We screwed on the top support, and then placed a couple more cake layers on top, so that we had just as much on top as we did on the bottom. With electric knife in hand, I sculpted out the basic beastie shape. The head is the biggest part, and that round cake layer was supporting most of it. I did put the chin underneath, since it didn't really need all that much support, and then cut out the belly.

With the body carved out, our next step was to cover it in cream cheese frosting. You'll want a nice, thick layer of this stuff, for two reasons. First of all, it tastes really good. But more importantly, it will cushion the fondant on top of the cake, which will help to hide any imperfections.
